An Honest Day's Labors is a Story Mission in Red Dead Redemption 2 (RDR2). This is one of the "Main Quests" of the game and players must complete it to advance the Story. Completing Story Missions opens up Stranger Missions as well as additional content throughout the game.

Sadiest Work
John Marston (you) meets Sadie Alder in the Saloon in Blackwater. You speak about a job that she has in-store: Kidnapping a bounty she caught first, from a rival who stole him from her. Follow her lead once you mount your horses. You speak about a number of topics, including the fact that you have Charles Smith at your ranch. Notably, you offer Sadie a stay at your ranch, but she kindly declines.
Your long journey on horse ends when you get off at a cliff and scope out James Langton's gang, the man who stole her bounty. You see them riding off, through the canyon underneath you. Follow Sadie's lead until you reach another cliff, above the canyon the gang stopped in. Sadie will ask you for your input as to how to proceed: Stealthly or Guns Blazing.
Stealth
Follow Sadie's lead down the canyon. You'll reach two of Langton's men which you'll have to stealth kill. Take one, and let Sadie take the other. Proceed forward to the bridge and Sadie will kill the guard there. Across the bridge there will be two more guards. Kill them and the rest of them will come out to play.
Continue to follow Sadie's lead and kill the men until there's nobody left but Shane Finley, the bounty that was stolen. Stow him on the back of your horse and leave. As you ride off, more of Langton's men will appear. Fight them off as you follow Sadie's lead through the canyons. Once you exit the canyons, a cinematic will play showing you two ride off into the sunset. Eventually it'll be night time, but continue following Sadie until you reach the Blackwater Sheriff's Office. Set him down in a cell.
Sadie tells the Sheriff that Langton is dead, and collects her reward, then gives you your cut and tells you she can give you more work if you please.
