Horse Flesh for Dinner is a Story Mission in Red Dead Redemption 2 (RDR2). This is one of the "Main Quests" of the game and players must complete it to advance the Story. Completing Story Missions opens up Stranger Missions as well as additional content throughout the game.

To get back at the Braithwaites, Tavish Gray asks Arthur, John and Javier to steal prized horses from Braithwaite Manor that he claims will sell for $5000.

Horse Flesh for Dinner Walkthrough
Overpriced
Arthur Morgan (you) enters midway through a conversation between Tavish Gray, John Marston and Javier Escuella. They are told that horses at Braithwaite Manor can be sold for up to $5000 dollars to some men at Clements Cove, and asks if you guys can do that without leaving a trace of connection to the Gray family.
You head out with John and Javier to Braithwaite Manor, and once you arrive, you con the guards into letting you in then proceed to the stables. You find the Stable Hand who is reluctant to show you around at first but comes around, and if you let him, will introduce you to the three horses. You'll be given the option to stealth kill him while he's talking about the horses. Once he's dead, you then each lead a horse out for John to bring along.
As soon as you leave the stables, a man will begin calling you out for stealing the horses. You must then flee the scene, providing cover fire for your Javier, John and the horses. Once you have gotten far enough, one horse will break free and attempt to flee. Use your lasso, or ride up to the horse and jump on top of it to catch it. A good way to catch it quick is to stay close to John when the Braithwaites start disappearing.
Apparently Not
Once you catch the horse, return to your group and follow them to Clements Cove to find the two brothers, Clay and Clive, who will buy the horses, but not at the sky-high price of $5000. Instead you'll have to settle for a very modest $700, which you refuse but John ultimately agrees to. You return to camp and get your pay.
